Winemaker Notes

Kypra grapes come from the "Vigna Bassa", a vineyard with south-east exposure, at 250-350 meters above sea level. They are grown with the double guyot system and arise on a soil rich in silt, limestone and chalk, which gives the wine a strong flavor and aroma.
Alcoholic fermentation takes place in concrete tanks triggered only by indigenous yeasts. The aging lasts for 9 months in concrete tanks and a further 2 months in bottle. We advise to drink it between 14 and 16° Celsius and to save some wine for the following day to fully appreciate its aromatic evolution.


The Story

The volcanic matrix of the soil combined with constant ventilation, thanks to the winds coming from the nearby Tyrrhenian Sea, and a temperate climate, allow the grapes to express unique characteristics. This wine is fresh, structured and soft, with peachy and fruity notes. Nicola Chiaromonte is one of the most welcoming and hospitable people if you ever get a chance to stay in their agriturismo and see his huge built out cellar. Only 660 cases produced of this sparkling wine.
