Patrick Uccelli from Ansitz Dornach in Alto Adige is talking about his philosophy on viticulture and (natural) winemaking.

Patrick doesn't believe in the term 'Natural wine', as wine itself is not made by nature, it doesn't naturally exist. So if one wants to make wine it is important to learn how to do it well, and to manage the soil so that it will lead to healthy vines. The same goes for the cellar: winemaking is not an ideology, it is about knowing how the use what you have. One should always make good wine, whether using selected yeast, clarifying or stabilizing agents, etc. or not. "This is nature" is not an excuse for bad wine, nature doesn't make wine, we humans do.
