Winemaker Notes
Produced in Monforte d’Alba, Langhe, Piedmont, from 100% Nebbiolo (Chiavennasca) grown on clay-limestone soils at approximately 400 meters above sea level. The vineyards are farmed organically, all work and harvesting are done by hand.
Fermentation is with native yeasts in stainless steel, with a moderate 6-day skin maceration, followed by alcoholic fermentation in steel for about 15 days. Aging proceeds in barriques for 6 months, then in large wooden casks for 4 months, before settling in steel for a few months and ultimately bottling without filtration, with further rest before release.

Simone Scaletta's creed says it all: "As a wine producer, my philosophy is based on Respect for the land. All my efforts go into the use of natural techniques which favour manual labour and natural agronomic methods, while keeping mechanical intervention at a minimum in the vineyard.
I try to practice a type of viticulture which is extra careful about the soil quality, the area biodiversity, the environmental sustainability as well as preserving the landscape. As a matter of fact, I have made a studied choice not to use weedkillers, to use green manure and to eliminate systemic products in the vineyard."
