Winemaker Notes
The grapes are hand-harvested and gently pressed before fermenting in stainless steel to preserve precision and varietal expression. The second fermentation takes place in bottle according to the traditional Metodo Classico. The wine ages on its lees for an extended period, developing texture and complexity while maintaining structural tension. The dosage, when present, is kept minimal to preserve dryness and clarity.
The Story
Flavio Sobrero comes from a Barolo family, but Alta Langa is where he allows himself a different kind of precision. These are high, cold hills in southern Piedmont, far from the weight people associate with Nebbiolo. Alta Langa requires patience, altitude, and humility, and Flavio approaches it with the same discipline he brings to his red wines. What stands out to us is how seriously he treats the category. Alta Langa is still evolving as a denomination, and producers like Flavio are helping define what it should be. This is a place which shows lots of promise. He farms carefully, keeps yields in control, and gives the wine the time it needs on the lees. This is not sparkling wine made as an afterthought. It reflects a grower who understands that finesse comes from site and restraint, not embellishment. It feels intentional and measured, like someone who knows exactly what he wants the wine to express.
