Winemaker Notes
Lambrusco Grasparossa vines are around 15 years old and are grown on silt-clay soil, particularly suitable for red grapes, at an altitude of around 150 meters above sea level. Libeccio is a refermented sparkling red wine made with pure native Lambrusco Grasparossa grapes. The vines are grown according to the principles of organic farming, following the traditions of the past. At the end of the harvest, the grapes are softly pressed. The must is macerated on the skins for 21 days, followed by fermentation in steel using indigenous yeasts only. The wine is refermented in the bottle without final disgorgement and without filtration, stabilization and clarification procedures.
Libeccio 225 fully expresses the traditional peasant spirit of the Reggio Emilia hills.
The Story
Denny Bini is considered one of the glittering names in the world of artisanal Lambruscos. The winery, Podere Cipolla, is located on the outskirts of the city of Reggio Emilia, in the small hamlet of Coviolo, where the plains gently transform into green hills. Denny's adventure began in 2003 when he decided to rent a few hectares from his grandfather and plant his own vineyards. The young man used local grapes, mainly Lambrusco, using hsi own home garage for the vinification. A short time later a friend allowed him to use his cellar, thus marking the official beginning of the Podere Cipolla's history. The wines are territorial expressions, tasty and rustic, certainly not designed to be precise and chiseled, but capable, like few other wines, of freeing themselves from conventionality and letting the land and the grapes speak directly.
