Mixed seafood risotto, fish soup, grilled cod fish, veal stew with porcini mushrooms sauce and basmati rice. Blue cheese is a great match but Montebore cheese is true perfection with it (but probably difficult to find)

The Story

Timorasso is a native white grape variety grown in the Tortona area since the Middle Ages.

After the Second World War its production is gradually abandoned, preferring to more resistant and vigorous grapes.

In the 90s Piercarlo and Elisa, the current owners, with some young winemakers from the Tortonesi Hills are among the first 5 companies to believe in the recovery of Timorasso and identify in the 20 hectares of de Colombera vineyards, the land destined to enhance the characteristics of this vine: an alternation of layers of sandstone and clayey marl, limestone and tuffaceous patches, the right altitude to convey to the wine the decisive minerality and particular finesse, which are best expressed in aging.

If Timorasso in youth is full-bodied and pleasant, after the years of bottle aging the most interesting characteristics emerge: the mineral and hydrocarbon notes, the refinement and balance, between power, finesse and intensity.
