Winemaker Notes
Chardonnay and Pinot Noir in varying percentages depending on the characteristics of the vintage. The vinification begins with a soft pressing of the bunches and subsequent passage of the must in refrigerated tanks with fermentation on indigenous yeasts. Aging on the lees in the bottle for 24 months. "Mompiano Brut" is a very versatile sparkling wine that adapts well to a wide range of light and fresh dishes, emphasizing the flavors and adding a touch of elegance and liveliness to the meal.
The Story
In the area of Mompiano, an ancient municipality in the province of Brescia, stands Colle San Giuseppe. In this area called "Ronco" viticulture has got an ancient story to tell. Mompiano possessions were donated by Charlemagne to the Monks of Tours and subsequently to the Benedictine Monks of S. Faustino so that they could safeguard the vineyards and centuries-old woods of those areas. Among the families who worked in collaboration with the Benedictines there were the Pasolinis who were not counted among the woodcutters, but among the winemakers. Today the passion for agriculture, and in particular for natural viticulture, characterizes the work of safeguarding and valorising the land and the cellar with the hope that what has been history over the centuries will also be a source of inspiration for the future.
