Winemaker Notes

Barolo is produced from Nebbiolo grapes coming from a 2-hectare half moon-shaped vineyard on the hills of Monforte d'Alba. After the manual harvesting of the bunches follows soft pressing and maceration of the must on the skins in steel for 7 days. Fermentation takes place in steel tanks for 10 days. Malolactic fermentation for 2 months in 40% new barriques, 60% second passage. Aging in barriques for 12 months and in large barrels for other 12 months, further rest in the bottle for at least 8 months.


The Story

Simone Scaletta's creed says it all: "As a wine producer, my philosophy is based on Respect for the land. All my efforts go into the use of natural techniques which favour manual labour and natural agronomic methods, while keeping mechanical intervention at a minimum in the vineyard. I try to practice a type of viticulture which is extra careful about the soil quality, the area biodiversity, the environmental sustainability as well as preserving the landscape. As a matter of fact, I have made a studied choice not to use weedkillers, to use green manure and to eliminate systemic products in the vineyard."
