From the hills of Colle San Giuseppe, the Mompiano Pas Dosé Metodo Classico 2018 is crafted with indigenous yeasts and matured on the lees to reveal true complexity.
In the glass it shows a pale golden hue with delicate bubbles. Aromas of white flowers, citrus peel, brioche, and light almond evolve into hints of honey and wild herbs. On the palate it is elegant yet precise: fine mousse, vibrant acidity, and a saline minerality carry notes of green apple, lemon zest, and crushed stone. The finish is dry, refined, and lingering.
This is a classic method sparkling wine without dosage—pure, expressive, and deeply tied to its terroir. Through extended lees aging and a disciplined approach, it captures the essence of its place while remaining fresh, structured, and contemplative.
Story
In the area of Mompiano, an ancient municipality in the province of Brescia, stands Colle San Giuseppe. This land, known as “Ronco,” has a long viticultural tradition: vineyards once donated by Charlemagne to the Monks of Tours, later entrusted to the Benedictines of San Faustino to protect its vines and century-old woods.
Among those who cultivated here were the Pasolini family, known not as woodcutters but as winemakers. Today, the same spirit of stewardship continues, with a strong focus on organic and natural viticulture, aiming to preserve the land’s identity while projecting it into the future.
The Mompiano Pas Dosé Metodo Classico 2018 expresses this philosophy with clarity. Crafted without dosage, it offers a pure interpretation of its terroir: elegant yet austere, with fine bubbles, citrus zest, mineral depth, and a long, saline finish.
