Winemaker Notes

The average age of the vineyards is 20 years trained using spurred cordon and sapling. The yield per hectare is approximately 60 quintals/ha. Harvest period from mid to late September depending on the vintage. The harvest of the grapes is done exclusively by hand. After soft pressing of the bunches the alcoholic fermentation is triggered only by indigenous yeasts naturally present on the skins. Follows maceration of the must on the skins for 15 days. Maturation for 1 year in 50 hl oak barrels and further bottle aging for at least 4 months.


The Story

Federica Dessolis' destiny was written in her DNA. Her great-grandfather was the winemaker with the largest extension of vineyards in Mamoiada, the wine village in the most authentic heart of Sardinia where the young winemaker has chosen to return to give substance to her dreams after studying abroad and various work experiences including a year spent in the legendary Romanée Conti winery. However, Federica does not confine herself to the usual iconography: no childhood in the vineyard with her great-grandfather and her attraction for wine came late. Yet a few years ago she returned to Mamoiada, starting the winery project called Esole (the dialect version of their surname) together with her brother Francesco. Their mission is to highlight the true elegance of Cannonau giving it a modern style far from alcoholic and raw wines of the past.
