Winemaker Notes
“All'Antica” is a rosé obtained from Nerello Mascalese grapes from ungrafted vines with an average age of 80 to 100 years planted on a soil composed of a plurality of lava flows stratified over history and time. Using traditional methods, Nerello Mascalese is harvested exclusively by hand, avoiding any type of mechanization in the vineyard. Its name comes from the fact that it is made just as wine was once made. Once in the cellar, the bunches are placed inside steel tanks where the indigenous yeasts start the alcoholic fermentation followed by a 36-hour maceration on the skins.
The process concludes with a 12-month refinement in steel vats.
The Story
Cantina Scirto is a small artisan business located on the slopes of Etna in the Passopisciaro area. Here Giuseppe Scirto and Valeria Franco have been cultivating 2.5 hectares of land since 2009, inherited from Giuseppe's grandfather, united by mutual love and a visceral passion for their land. Before starting on this adventure, Giuseppe was an IT expert and Valeria was a graduate in foreign languages. Their choice was to produce wine as their grandfather "Don Pippinu" and as his ancestors have always done before him, without using synthetic chemicals. For this reason Giuseppe and Valeria define themselves as "heretical winemakers", firmly rooted in the centuries-old traditions of their land and linked to a rigorous idea of authentic craftsmanship.
