Antonio Cesari and his father Stefano tell us about their passion for one of the most famous and appreciated Italian red wines in the world: Amarone della Valpolicella. The winery counts three crus of excellence: Brigaldara, Case Vecie and Cavolo. Each vineyard has its own peculiarities and requires special care. After the harvest the second fundamental phase takes place: "l'appassimento" (drying phase) of the grapes on the racks for the concentration of sugars and aromas. Here, however, the "Brigaldara style" takes over: an Amarone must always retain great lightness, typicality and drinkability. A choice in contrast with the trend of the past years but faithful to the tradition.
