Winemaker Notes
The 100% Pinot Grigio grapes come entirely from proprietary vineyards trained with spurred cordon and guyot. The yield per hectare is about 45 quintals with an annual production of 300 bottles. In the vineyard it is practiced mechanical weeding and green manuring with leguminous plants.
For the treatments, carried out only when strictly necessary, only copper, sulfur and products compatible with the Organic Certification. The grapes are harvested manually. In the cellar after the pressing, white vinification is carried out followed by spontaneous fermentation in barrique by indigenous yeasts. No temperature control. The wine rests on the lees for about 4 months and ages in steel for about 4 months. In the bottle for further two months before being put on sale.
The Story
In 1971, Leo Ferre, famous French poet and singer - and his wife Maria Cristina Diaz, bought this farm where thry will settle with the family and where Maria Cristina and the children live today. The Agriturismo San Donatino is located in one of the most suitable areas of the entire Chianti Classico, facing SW on the Val d'Elsa at 420 meters above sea level.
The winery, followed until the last days by Giulio Gambelli and today by Federico Staderini, has an environment where the traditional sign of the territory and the difference of the vintages have the absolute prevalence of every form of standardization of wines. Fermentation takes place spontaneously without inoculation of yeasts, maceration is prolonged and the wines remain “sur lie” for several months. The base wines are aged only in steel while the older crus in wood.
