Winemaker Notes

Simone Scaletta's Dolcetto d'Alba is produced with grapes coming from the half-hectare vineyard known as "Viglioni" in Monforte d'Alba, in the heart of the Langhe. After the manual harvesting of the bunches, soft pressing follows. The maceration of the must on the skins takes place in steel tanks and lasts for 5 days. Fermentation in steel for 2 weeks. Aging in steel for 9 months and refinment in bottle for at least 3 months


The Story

Simone Scaletta's creed says it all: "As a wine producer, my philosophy is based on Respect for the land. All my efforts go into the use of natural techniques which favour manual labour and natural agronomic methods, while keeping mechanical intervention at a minimum in the vineyard. I try to practice a type of viticulture which is extra careful about the soil quality, the area biodiversity, the environmental sustainability as well as preserving the landscape. As a matter of fact, I have made a studied choice not to use weedkillers, to use green manure and to eliminate systemic products in the vineyard."
