Winemaker Notes
Sangiovese vineyards with an average age of 25 years are located on clayey soils with the presence of marl for a total extension of approximately 3 hectares. The type of system used is spurred cordon and Guyot with a density of approximately 6,000 vines per ha. After manual harvesting, the grapes are softly pressed. Spontaneous fermentation begins immediately with maceration of the must on the skins for 24 hours. Refinement for 11 months in steel tanks and concrete vats. Total sulfur: 20 mg/l.
The Story
Cappuccetto Rosa is the first rosé produced by Podere le Ripi obtained from very short maceration and soft pressing of pure Sangiovese grapes. A rosé that reveals an unexpected side of this vine, characterized by power, acidity and tannins, in this guise it appears ethereal and light: with a pale color, a fragrant and rich nose, and a great delicacy and vitality that make it drink almost endlessly. In the cellar they call it "naked Sangiovese".
