In 2007, the historic Monte dei Roari winery was taken over by Stefano, the founder's grandson, and by his wife Alessia. Thanks to their background and to the awareness of the quantities of non-grape products allowed in winemaking, they immediately choose the path of organic conversion into the vineyard (biodynamic since 2011) and work in the cellar without tricks.
